It seems impossible that you can take a trip to Mexico for just a week-end, but that is exactly what Harriet and I did. Living in Southern California makes Cabo an easy breezy vaca spot; it takes just a couple of hours to get there and when you arrive you are treated to a casual but elegant week-end. If you aren’t familiar with Cabo San Lucas, it is located on the southern tip of Mexico’s Baja California peninsula. Cabo is renowned for beautiful beaches, great hotels, many exceptional restaurants and a very active nightlife. There are golf courses galore, lots of fishing expeditions and almost any water sport you can imagine. One of the most famous sights is the arch of Cabo San Lucas which is the exact spot where the Pacific Ocean meets the Sea of Cortez.

We landed late Thursday afternoon in a particularly joyous mood; we were definitely ready to get the party started. We had reservations at The Resort at Pedregal which, in my mind, is one of the most exquisite hotels I have ever stayed in. We dropped our luggage and headed out to one of our favorite restaurants, Edith’s.

Edith’s offers an amazing combination of the cuisine of Baja with a Guerreran style. The ambience is casual but elegant, the food is consistently wonderful, offering a regional fusion of seafood and steak all prepared with local ingredients.

After a fabulous dinner starting with their table side caesar salad, famously fresh Pacific Ocean fish and a flambe dessert, we simply had to have one of our favorite Mexican traditions: a coffee martini!

A perfect ending to a fabulous evening and our trip was just beginning! It was time to head back to The Resort at Pedregal which was exactly where we wanted to be.

Where to begin. The resort is absolutely spectacular. You enter through the iron gate and head straight through the man-made cave to the lobby. The lobby is located at the top of the resort so the view is breathtaking.

After we checked in we thought it was time to hit the pool.

Located just above the beach so you have this perspective of endless water.

The poolside service is flawless; yummy tapas and refreshing cocktails.

We were lucky enough to snag reservations at the famous cliffside restaurant, El Farallon. We thought it might be fun to enjoy an early libation before dinner so we made our way to the poolside bar.

We watched a glorious sunset then walked through the resort to the restaurant which literally sits out on a cliff which overlooks the Pacific Ocean. It’s a one-of-a-kind dining experience; you begin by selecting your four course meal from a selection of fresh fish, lobster, shrimp or steak which is located behind a glass counter. Your meal is served with salad, sides and dessert. It is expensive but well worth it. We enjoyed a bottle of local sauvignon blanc which simply made the meal complete.

Each of Pedregal’s rooms has its own private pool. From our room you had a perfect view of the Pacific. It is no wonder that The Resort at Pedregal has been awarded

One of the truly amazing things about Pedregal is the art and sculptures that line the resort. Just outside our room was a tree adorned with ornaments found throughout Mexico. It was too perfect a setting to pass up so Harriet posed in her colorful cover-up.

That evening we had dinner reservations just outside San Jose del Cabo which is about 40 minutes from the hotel so we had to leave the pool much earlier than we would have liked. But I must admit that the restaurant we selected, Acre, was absolutely worth the trip.

Arce is tucked in the foothills of San Jose del Cabo so it seems you are driving through the desert to get to your destination.

When you arrive you will be absolutely transported to another world. It is a lush sanctuary which is set on 25 acres and features treehouses, an organic farm and an award-winning restaurant and bar. The restaurant has a sophisticated but rustic appeal. It juxtaposes, lush greenery and natural materials which give the space a wonderful balance.

I love interesting cocktails and Acre doesn’t disappoint. The concoctions are innovative but relatable. Loved them!

Sadly we departed Acre and made our way back to The Resort at Pedregal. We had an early departure so our Cabo trip was nearly over. But what a glorious way to spend a few days in a magical place.
